Vegan pancakes with fresh figs and pistachios

A super quick, healthy brunch recipe from The Whole Remedy. Serves 4 Ingredients 1 cup spelt flour OR use 1 cup ground almonds or hazelnuts 1 cup whole oats 3 tbsp almond butter 1 cup almond milk 3 ripe bananas sliced 2 tsp vanilla extract paste 1 tsp cinnamon 1/2 tsp aluminium free baking soda Method Blend all ingredients in a blender until smooth. Using a ladle cook pancakes in batches in a non stick non toxic fry pan with olive oil. Serve with pure maple syrup, fresh figs, Coyo and chopped pistachios.
